Solaire Resort Quezon City's lounge and nightlife destination has updated its menu to showcase Filipino cooking techniques and ingredients.

At the heart of the transformation is Chef Janu Belardo, the hotel's youngest and first female chef de cuisine.

"Instead of focusing solely on Western or American cuisine, we've infused Filipino influences, not by replicating traditional dishes but by highlighting local produce and applying techniques like fermentation, preserves, pickling, and marination. From vinegars and sauces to doughs, everything is made in-house," she said.

In the new menu, spicy buro is added to grilled octopus, oysters echo isaw with Belardo's signature vinegar mix, and asin tibuok is grated over burnt Basque cheesecake, among others.

The chef has also crafted a new house specialty, a seafood tower ideal for sharing.

Visit the Quezon Club website to reserve a table, or call +632 8888-8888.
